You know those times when you’re finished with your main meal and you really wish you had saved room for the fruit and cheese course, but you are just too full?

Us too, this happens to us all the time.

Why not serve the fruit and cheese as a salad?

This Apple and Goat Cheese Salad is easy and luxurious. It’s an excellent side for a Sunday dinner, or brunch, or a festive meal. It’s also excellent as a fruit and cheese course.It has only five ingredients: apple, honey, goat cheese, almonds, and lemon.

And it can be made in less than 10 minutes.

Maybe less than 5 if you are a pro at julienning an apple.

There’s a million different ways to chop an apple, but we decided julienne would give this salad a light texture. We used a large Honey Crisp apple and our mandoline slicer with the julienne attachment (pictured below). Watch your fingers! It is sharp, but does a perfect julienne cut.

Then we tossed the apples with a bit of juice from a fresh lemon to keep them from browning.

Once this part is done, it literally took three additional short steps.

Sprinkle sliced almonds over the apples. We decided not to toast the almonds, but doing so would add a more nutty flavor. Just toast in a cast iron pan on medium heat until brown, stirring often with a spatula.

Then crumble your favorite creamy chèvre over the apples and almonds.

Finally, drizzle with honey and serve.

There are a lot of substitutions you can make:

  • walnuts for almonds;
  • feta for chèvre;
  • pear for apple.

Mix it up, add your own favorites, and make it your own.

We love that this salad has no dressing. Not that we don’t love dressing, of course, but it makes it just so easy. Just add honey.

Instructions
  1. Julienne the apples using a mandoline slicer with a julienne attachment (The Salad Lobby recommends the LiBa mandoline slicer, a julienne peeler, or using a knife. Alternatively, chop the apple into small pieces.
  2. Toss the apples in the juice of 1/2 lemon.
  3. Top with chevre and almonds.
  4. Drizzle with honey.

    I LOVE apple salads! I’m still trying to find a substitute for goat cheese that I can eat but there really is no substitute. I would suffer the consequences though for this delicious salad!

    This would make for a wonderful side at Thanksgiving or really any Fall dinner. I love Goat Cheese and apple together… I love that you combined it into a salad!
