Preheat oven to 350 degrees. Prick sweet potato several times with a fork and place in a baking dish. Bake until tender, about 40-50 minutes depending on thickness.
When the sweet potato has cooled, peel and chop into cubes. Combine with other vegetables in a bowl.
Drizzle with olive oil and squeeze lime juice over the top. Toss until well combined, being careful not to mash the sweet potato. Add salt and pepper to taste.
